Thai Red Curry Chicken
Thai red curry is a popular Thai dish made with red curry paste and cooked in coconut milk. It’s typically made with a protein like chicken, shrimp, pork, beef, or tofu! Of course, if any of these ingredients don’t work for you, you’re welcome to substitute anything if need be. If you’d like to add extra spice to this dish, we recommend adding some cayenne pepper.
Ingredients
Coconut oil
1 lb chicken breast
White rice
Garlic cloves
White onion
2 cans of coconut milk
Red bell pepper
Baby spinach
Shredded carrots
Thai red curry paste
Fish sauce
Cilantro
Sea salt
Lime juice
Ground coriander
Fresh ginger (or ground)
Coconut sugar (brown sugar substitute)
Instructions
Add 2 tbsp of coconut oil and one diced onion into a large skillet on medium heat. Cook until onions are soft. Add sea salt for extra flavor.
Add three cloves of minced garlic, 1 tbsp of minced ginger, 2 tsp of coriander, and 3 tbsp of red curry paste. Cook until fragrant while stirring often.
Now, you can add in 2 cans of coconut milk, fish sauce, coconut sugar, and chicken. Make sure to cut the chicken into bite-sized pieces. Stir to combine ingredients and bring to a boil. Once it reaches a boil, bring it to a simmer on medium heat. Leave uncovered for 7 minutes. Make sure to stir occasionally.
Combine chopped bell pepper, shredded carrots, and spinach. Continue to simmer for another 7 minutes. This may take a little longer depending on how long the chicken takes to cook thoroughly.
Once the chicken is cooked, turn off the heat, add a little lime juice, and top with cilantro. Serve over rice, and enjoy!
