Allium Vegetables
Many Thai dishes are vegetarian or have a vegetarian version, so it’s no surprise that vegetables are essential to Thai cuisine. The vegetables you find most often in Thai cooking are allium vegetables. Allium vegetables are all closely related and are sometimes called the onion family. So this group of vegetables naturally includes onions, but also chives, scallions, leeks, and garlic. They all have strong flavors and are versatile in cooking.
Coconut Milk
Whenever a Thai dish requires some liquid, it is often coconut milk. You will find it in most Thai soups and it is an essential ingredient for curries. Although coconut milk is often a dairy substitute, the funny thing about coconut milk is that there is no good substitute for it. If a recipe calls for coconut milk, you really need to use coconut milk. Ideally, a Thai chef would use fresh coconut milk, but coconuts are a challenge to work with, so they turn to coconut milk that comes in a can or a carton. But finding the right coconut milk to make Thai dishes properly can still be tricky. Because it is often sold as a dairy substitute, the fat content is different.
Chilies
Making Thai dishes properly often comes down to the chilies. There are many varieties and each has its own characteristics and flavor. When you have a yellow, red, or green curry, the chilies are what give the curry its spice and flavor. The entire flavor profile of a dish changes depending on the chilies that go into it.
